Greek Grandmother's Chicken Gyros - A Recipe of Love and Legacy

The Story Behind the Gyro

The gyro has graced Greek streets since ancient times, though the vertical spit method we know today emerged in the 19th century, inspired by Turkish döner kebab traditions. Originally crafted with lamb or pork, the gyro became a symbol of Greek culinary identity -a humble yet magnificent street food that united communities around shared meals and joyful gatherings.

Cultural Impact: Gyros transformed Greek social dining, becoming the heartbeat of street food culture. They bridged class divides, offering affordable nourishment while celebrating bold Mediterranean flavors that defined Greek hospitality and warmth.

The First time ever ate or tasted what a Gyros was back in the day when I got deployed to Greece under the European Refugee Crisis Program -2016 and was living the heart and happening of Northern Greece. I was located close to Macedonia or Eskopia , close to the historical city of Thessaloniki, where the famous Apostle and tentmaker Paul lived, walked and preached the Gospel to the Gentiles.  

Crafting Your Gyros

Ingredients

For the Marinated Chicken:

  • 600g boneless, skinless chicken thighs

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • Zest of 1 lemon

  • 3 garlic cloves, minced

  • 1½ teaspoons dried oregano

  • 1 teaspoon sweet paprika

  • 1 teaspoon ground cumin

  • ½ teaspoon dried thyme

  • Sea salt and freshly ground black pepper to taste

For Serving:

  • Warm pita bread

  • Tzatziki sauce

  • Sliced tomatoes

  • Thinly sliced red onion

  • Crisp lettuce

  • Crumbled feta cheese

Instructions

Step 1: Create the Marinade In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, cumin, thyme, salt, and pepper. Whisk until well blended.

Step 2: Marinate the Chicken Place chicken thighs in the marinade, turning to coat completely. Cover and refrigerate for 2-4 hours, or overnight for deeper flavor infusion.

Step 3: Cook with Care Heat a cast-iron skillet or grill over medium-high heat. Cook marinated chicken for 4-6 minutes per side until beautifully golden and cooked through (internal temperature of 75°C/165°F). Let rest for 5 minutes.

Step 4: Slice and Assemble Slice chicken into thin strips. Warm your pita bread, then layer with tzatziki, chicken, tomatoes, onions, lettuce, and feta. Fold and serve with love.
